Honey Baked Chicken

This is what I made for dinner tonight. It turned out brilliant and so tasty! Yasu was raving about it, had two serves, and was still licking his plate, then said he couldn’t wait for tomorrow’s lunch so he can have it again!

A definite winner. The chicken was so tender!

Honey Baked Chicken – Southern Style

Ingredients:

  • I used 4 chicken thighs but you could use drumsticks, or breasts just as easily
  • 2 tablespoons butter
  • 2 tablespoons olive oil or Canola oil
  • 1/2 cup flour
  • 1 1/2 teaspoons Creole seasoning or a seasoned salt blend (I used chicken salt and it was yum!)
  • 1/3 cup honey
  • 1/4 cup brown sugar
  • 4 tablespoons lemon juice
  • 2 tablespoons soy sauce

Preparation:

Wash chicken and pat dry. Toss in a food storage bag with the flour and Creole seasoning.

Melt butter with olive oil; pour into a long baking dish.  Heat oven to 180°C.

Arrange chicken in the baking dish, turning to coat with the butter mixture. Bake for 30 minutes.

In a saucepan, heat honey with brown sugar, lemon juice, and soy sauce, stirring to blend.

If there is any butter mixture left in the pan, discard first, or change pieces into a new pan.

Pour the honey mixture over the chicken pieces and return to the oven. Bake for 30 to 40 minutes longer, turning the chicken pieces every 10 to 15 minutes.

* It may seem fiddly but it’s really not. The chicken can be turned over in the butter and oil every 15 minutes or so, I found, so it really only needs to be turned twice. Also once the sauce is on, it really only needs about 15 minutes or so to caramelize the brown sugar to a nice dark brown.

The lemon really shines through in this chicken and adds a really nice depth of flavour.

Well, I made someone, just one someone very happy yesterday, with Curry Cup Noodle, all the way from Japan. :)

We can’t buy it here, and while Yasu was in Japan, his main concern was having curry cup noodle most days. It never occurred to me until we returned to just get some shipped from Japan, so that’s what I did.

4 cups of noodles…who could imagine it could make someone’s day?

Insight

This long weekend has been quite an ordeal. It started out ok, but I think I have had some bad energy directed my way, and because I lapsed in protection of myself, I was quite ill for the past two days.

Is this all mumbo-jumbo? Well, in short of it, if someone wishes bad things on you, it can happen. It’s called a psychic-attack, and if you don’t keep protecting yourself with white light, or you let yourself be drawn into their feelings, then you can let them and their thoughts make you sick.

I believe I was a victim of just such an action this weekend, so I spent most of the weekend feeling anxious, nightsweats, nightmares, and feeling sick to my stomach, and alot of headaches.

I asked my spirit guides for help and they helped me up and out of my attack and I went in my healing room and burnt some candles, spread the white light, and Reiki symbols around myself, Yasu, and our house, to protect any bad energy coming towards us.

It worked, and soon after I started to feel better, I got up, had a shower, and ate something. I really feel much better now.

That is the first time I have ever had a psychic attack. I’ve heard other friends in my field talk about them but until now I have been very protected and/or never had alot of bad energy around me.

I believe, after thinking about it, I somehow attracted this bad energy, and really invited the energy into my life and my world by constantly thinking about the source of the energy. Just like Abraham says, even if you do NOT want something, you are attracting it, because like attracts like. It is the wanting, whether you do or do not want it, that brings it to you.

I have learnt a valuable insight into my thoughts, and I think that now I am much more aware of the way I am thinking, and my feelings when I think. How my body reacts when I think about something, is a major point that Abraham talks about in the Law of Attraction. For example, if you think you like someone, but every time you are around that person you feel dread, you are acting in discord with what your body really feels.

Your feelings are a major guidance system, they are telling you if you are going with or against what you really should be doing. If you are going with your feelings, then you should only feel happiness.

I will expand more on this in my next post. :) It might not be so much mumbo-jumbo then. :)

Productivity

Well, I’ve had a productive weekend so far. This weekend is a long weekend for the Queen’s Birthday (Queen of England). Yesterday I got stuck in to cleaning the house, doing a load of washing and then I got stuck into my healing room, moved the old furniture out, my desk in, and rearranged everything, and it’s now finished. It feels so good to have my own place to go and relax! I even got in a meditation session last night before bed, which was excellent!

I invited Yasu in for a massage, as my first official client. He has been in there before but only unofficially, I mean before I set it up the way I wanted it. I’m really so happy in there, and Yasu really enjoyed the massage too. I had the music going, and only the candlelight to work with, so it was really nice.

I will post pictures in the next post, just want to get the photo’s right, as some of them are going on my website that I’m still working on at the moment. The website though I think, is not really so important, because most of my friends get their business through word-of-mouth anyway. Looking professional is good, but I think clients who go to healers want to feel relaxed and in safe hands, and you can’t know who is like that by a web page, only by meeting or hearing about the person.

Anyways, I made a chicken and vegetable quiche for dinner last night, it was really good. I didn’t really have a plan, just threw in random ingredients that I had, tomato’s, zucchini, red onion, and mushrooms, and seasoned it with some salt and pepper, and some cheese. Oh, and I forgot to say it was a crustless quiche. I got that idea from Helen some time ago, she mentioned she made it on her blog. It’s a quick and easy way to make a quiche when you can’t be bothered making pastry. Thanks Helen!
